BIOL 105-720 : The History of Spice

Vanilla Beans and Peppercorns: The Environmental Impact of the Search for Flavor

The course is completely on-line. (no in person, no zooming)

The class is a GenEd IV B non-lab science worth three credits. 

The class is divided into the history of the spice trade, case studies on pepper and vanilla, and the environmental impact of the spice industry. 

Summer I is five weeks long (May 29 – July 3). Each week will consist of three Modules that each contain readings, PowerPoints (may contain links to videos) and a quiz. Assignments include article or recipe reviews, a paper on a spice of the students choosing, cooking with that spice, and a creation of a brochure on the researched spice. There are three short books to read – one on pepper, one on vanilla and a third of the students choosing. 

You can work the class to fit your schedule – there are due dates, but you can do assignments early so if you want to do several modules in one day you can. You can also do the course from anywhere since it is online.
